I had a little fun experimenting in the kitchen this evening. We had some random foodstuffs lying around, so I whipped up some homemade mashed potatoes. Very light and fluffy, but not as good of Eva's.
I also made some stuffed Portobellos to be served over the mashed potatoes. They had fresh bread crumbs, garlic, onion, corn, quorn, Portobello stem, white wine, and oregano. I steamed some spinach, as well and served it with lemon butter.
Also, I wanted to send out a couple congratulations. First, I want to extend my excitement and congratulations to Belle Epoque on her new baby! Very exciting. And a congratulations to Katie and Devon on their buns in the oven! Yay.
