Instead of knitting like I should have this evening, I made soup. I had very few ingredients, but I managed to make a Pea and Spinach Soup.
Fresh Green Pea and Spinach Soup
1 medium onion, diced
4 C frozen green peas
2 cloves garlic, diced or crushed
a large handful of fresh spinach
4 C broth
1/2 C white wine
1 T parsley, chopped
1 T olive oil
salt and pepper to taste
Sautee the onion and garlic in the olive oil until the onions are translucent. Add broth and peas, and salt and pepper to taste. Cook for 5 minutes. Add the spinach and parsley, and continue cooking until just below a boil. Turn temperature down to low and add wine. Cook another 5 minutes. Transfer soup to a blender or food processor, blend until smooth. Serve with fresh ground pepper and a dollop of sour cream, if you feel so inclined.
Serve soup hot, and with the remainder of the bottle of white wine.
