Poached Salmon with Dill Sauce

I had some salmon leftover from last night, so I whipped up a little poached salmon. I used what I had in the house and ended up with stellar results. I really do love salmon.

Poached Salmon Ingredients
3/4 to 1 lb fresh salmon
1/2 small onion sliced
1 minced clove of garlic
3 sprigs fresh dill
1 teaspoon dried parsley
fresh ground pepper to taste
1/2 C lemon juice
3/4 C dry white wine
3/4 C water

-Put all ingredients except for fish into a large skillet, and bring to a simmer over medium heat.

-Once simmering, place salmon fillet(s) skin-side down in the skillet. Cover and cook for 5 to 10 minutes until fish flakes and is cooked through, but not overcooked.

-Sprinkle with fresh ground pepper, and serve with Dill Sauce (recipe below).


Dill Sauce Ingredients
1/2 C sour cream
1 teaspoon lemon juice
1/2 teaspoon minced dill
1/2 teaspoon white pepper
1 teaspoon dried parsley
dash of salt

-Mix together all ingredients. Chill until ready to serve the salmon.

i always forget about dill. wish i had been there to try this.
