I heart leeks.

I haven't yet started dabbling in cooking with my lovely food processor, Hilda, yet. I am planning on using her this week though.

I did have some fun with leeks this week though. It was a pretty rushed week so I ended up cooking a few old standbys, including my mom's chicken fajitas.

Here below, I whipped up some salmon with baked leeks and rice pilaf with blue cheese and dried cranberries. It was pretty tasty and made a great lunch the next day, which I was happy to share with my coworker Anna!
