Minted Cucumber Soup

3 cucumbers
1 scallions
16 oz plain yogurt
1/3 C fresh mint
2 T milk
2 T lime juice
1 T cumin
1/4 t garlic powder
salt and pepper to taste

- Peel cucumbers and slice in half longways. Use a spoon to seed the cucumber. Roughly chop.
- Add all ingredients together in a food processor or blender. Blend.
- Chill before serving. 15 minutes in the freezer will add a refreshing edge.
- Serves 4.
