This past Monday, we had neighbors over for a tree trimming party. The giant got a tree that night from a tree stand that was getting ready to close for the season. We now have a gorgeous 7' spruce adorning the living room. Before we decorated it, I worked on making a handful of cookies. I'm on a refrigerator cookies or icebox cookies. I got turned onto these by an article in a back issue of Martha Stewart Living from last year. (Yes, I am that behind in my magazine reading,)
On Monday, I cranked on these:
Pistachio Cranberry Icebox Cookies (I used walnuts instead!)
Almond Butter Cookies (I added one egg white to it after reading the reviews stating that it was hard to get them to create a solid dough.)
They were all very good. I had a frozen, leftover loaf of the Walnut Cranberry ones. The ease of pulling it out of the freezer, slicing it and baking it for a few minutes was awesome. I love the idea of being able to crank out fresh cookies at the drop of a hat.
We've had a busy week, and with our menorah and Christmas tree in place, we're looking forward to hosting some people tomorrow evening. Despite my best judgement, I went to Target twice today, along with the mall. Apparently, I'm a lot braver than I thought. When I got back, I alternated caffeine infusions with prepping more cookie dough and stretching my recovering bum shoulder. Baking of any sort is difficult these days given the lack of strength, motion and all that jazz. Using the KitchenAid has been great.

Thus far, I think my favorites were the Mocha Slice. Perfect with coffee.
